carlos ysaguirre, executive chef
executive chef carlos ysaguirre returns home to chicago this year bringing his culinary vision for artfully prepared yet simple, rustic cuisine to tesori trattoria and bar.
ysaguirre brings over 12 years of experience as a culinary professional that started as a line cook at the university club of chicago. he later refined his style and point-of-view at former north center restaurant Sola under executive chef carol wallack and from there moved on to executive chef/partner of italian concept Anteprima in andersonville where for the next six years he championed his philosophy of seasonally and locally-driven cuisine. during his tenure, he also helped open neighboring farm-to-table acre and regional-focused italian Bar Ombra to high praise, further showcasing his passion for working with local purveyors and regionally-influenced flavors while exhibiting his ability for larger leadership over a family of restaurants.
in 2014, carlos brought his philosophy to Jacoby's Restaurant & Mercantile in austin, texas where he continued to demonstrate back of house leadership and collaboration skills. while in austin, he flexed his “celebrity chef” bone, appearing at the celebrated Austin Food & Wine Festival and earning accolades for “people’s favorite dish” in the Do512 Karbach Chili Cook-off as well as “best in show” for the American Lamb Board’s premier Lamb Jam Global Flavors Tour.

scott berry brings over 25 years of industry expertise and operational leadership in both fast-casual and full-service restaurants to tesori trattoria & bar. his passion for service and hospitality has helped drive multiple operations and organizations to success. key highlights from his career include senior manager at the cheesecake factory managing daily operations of a 300+ staff member restaurant, bakery and bar, director of purchasing at rosebud restaurants inc., general manager at labriola bakery cafe & neapolitan pizzeria in oak brook, and most recently, restaurant operations manager at chicago's pompei family of restaurants.
